Cheesy Potato Soup (Meatless Monday #1)


  • 4-6 potatoes, peeled and quartered
  • 1 small onion, minced
  • 1 1/2 c. vegetable broth
  • 2 1/2 c. milk
  • 3 tbsp butter, melted
  • 3 tbsp flour
  • 1 tsp garlic salt
  • 1 tsp ground black pepper
  • 1 c. shredded cheese

In a large saucepan, bring potatoes, onion, broth, and garlic salt to a boil. Reduce heat; cover and simmer until potatoes are tender. Mash potatoes slightly while stirring in milk. Stir in butter, flour, salt and pepper. Cook over medium heat, stirring constantly, until thickened. Add cheese and mix until melted. 

Serve with toppings of choice. We like more cheese, sour cream, and green onions.
