Better than Betty Brownies!!

Brownies are a must in our house! You know the kind that you buy in a box, add an egg and some oil, and bake. The kind that is packed with preservatives and things that are not so great for your body!!

We are trying VERY hard to stop using boxed and premade things. Brownies were around long before the convenience cooking became popular, and that is what I tried to get back to with this recipe. A time when things were all made from scratch!!

Ingredients:

1/2 c. coconut oil, melted
1 c. sugar or stevia
1 1/2 tsp. vanilla extract
2 egg whites
1 egg (can use 2 whole eggs and no egg whites if you prefer)
1/4 tsp. baking powder
1/3 c. cocoa powder
1/4 tsp. kosher salt
1/2 c. flour

Preheat oven to 350 degrees

Mix oil and sweetener until well blended.
Let eggs come to room temperature before using.
Add eggs and vanilla to oil  mixture.
Mix all the dry ingredients into a separate bowl.
Stir dry ingredients into the wet ingredients.
Pour into a 9x9 greased pan.
Bake for 20 minutes.

Let them cool before cutting!
